What are you cooking?

Do we have a cooking thread? Because now we do...
Soon, I'm hoping to make some Apple Tart, just like my mum's.

What are people looking forward to cooking? Or eating? Food is always one of the highlights of my day.

Apple tart is always nice. I'm a person who looks forward to dinner too. Tonight is fajitas.

I go through phases of cooking things. Last year was roast dinners, year before it was chilli con and this year it is curries. So will accept any curry ideas!!!!

My standard goes something like this:

Medium heat,
Saute onion, chilli and garlic,
Cinnamon and cumin in the pestle and mortar,
Add peppers, mushroom and chicken (or corgette)
Add that, turmeric, fresh ginger, paprika to the pan,
Coat the food let the chicken half cook,
Add tomato puree,
Add cream,
Leave on a low heat with lid.

My idea is lose the courgette.

We had fajitas with the Schwartz seasoning. Zoe will have to tell you how good they were.

I'm not the biggest fan of them. I basically just replace the meat with a heavier veg sometimes. Could roast some large chunks of butternut squash or add more mushrooms or pumpkin as it's the season.

I do that too Joe. Usually I do mushrooms, 2 colours of pepper, kidney beans, chickpeas, tomato puree and some seasoning mix and it works out alright

Tonight I made mug cake, and the apple tart is still not made, despite being far superior. It just feels somewhat redundant with no-one else to make it for.
